How much lactose is in cheese?

Cheese is a dairy product, but contains varying amounts of lactose depending on the type and how long it is ripened. While fresh cheese and young cheeses tend to have a higher lactose content, the lactose content decreases as it ripens. Hard and semi-hard cheeses, such as Parmesan or Gouda, are often almost lactose-free because the lactose is largely broken down during ripening. Special manufacturing processes also influence the lactose content.
